Coffee and Walnut Cake is a classic flavour combination, a rich and quite unique tatse that I really like. This recipe has a distinct coffee flavour that contrasts beautifully with the sweet creamy mascarpone icing and the earthy taste of the walnuts.
the cake recipe is easy to follow and as you can see it turned out beautifully. The frosting/icing is made with Marscapone cheese, light muscovado sugar and Tia Maria – now that is absolutely delicious and not too sweet.
I used one 250g tub of Marscapone, you would need the full amount if you were going to cover the sides of the cake.
