Fava Bean Kiev and Optimum HealthyFry Giveaway

Fava Bean Kiev - a meat free Kiev style cutlet with melting butter inside

I’ve been looking into the origin of the Chicken Kiev and have been surprised to learn that it has very long and distinguished history.  Chicken Kiev is a recipe from the Russian Empire, with a nod to French Haute Cuisine, right back to the 18th Century spreading into Europe via the restaurant at the Continental Hotel in Kiev which was frequented by European travellers.

How to make Fava Kiev in the Optimum Healthyfry

What  I thought I would do was to try and create a meat-free Kiev using Fava Beans instead of chicken, while retaining the chilled butter in the centre and the  crisp ‘fried’ breadcrumbs on the outside.  Above is a step-by-step pictorial guide to how I made it, with more detail in the recipe below:

A vegetarian version of the traditional chicken kiev, using fava beans.

Ingredients
 

  • 250 g split fava beans
  • 1 tbsp chia seeds
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 50 g butter or non dairy spread
  • 1 pinch Salt
  • 30 g Parsley chopped
  • 1 tbsp plain flour
  • 1 pinch Salt & pepper
  • 1 egg
  • 75 g panko breadcrumbs

Instructions
 

  • Cover fava beans with water and bring to boil, simmer 30 mins until soft
  • Drain, and beat with wooden spoon until mushy but still with a little texture.
  • Add tsp salt, 1/2 tsp ground black pepper, herbs and chia seeds, to help bind together.
  • Leave in a covered bowl in the fridge until cold and thickened.
  • Mix it up with spoon or spatula and add half the parsley
  • Take half the mixture and form four flat escalope shapes, roughly oval
  • Mix the softened butter with crushed garlic and the remaining parsley
  • Form into four portions and place on top of the escalopes
  • Form a further four escalopes and place each on top of the butter and base, press the edges to make sure they are sealed. Return to the fridge for an hour.
  • Mix the flour with salt & pepper, coat each escalope with flour, then dip into beaten egg, then into panko breadcrumbs.
  • Preheat the Optimum HealthyFry
  • Cook two kievs at once in the Optimum HealthyFry Air Fryer at 180c for 20 min
  • Keep the kievs warm in the oven while the second batch is cooking

Notes

If you don't have an Air Fryer yet, then you could fry the kievs in a little oil or bake in the oven for 30 minutes at 180C

    What a great idea! I’m always looking for new recipes and this one looks really tasty, and healthy too. I’d love to have an airfryer as I’m trying to cook more healthily and anything that allows the crisp texture without frying in lots of oil sounds simply perfect!

      This is a great recipe that I’m sure my non-vegetarian friends and family would love as much I would ( a vegetarian for 30 years). I gave up using a deep fat fryer years ago because of the mess and health issues but I do yearn for that proper fried flavour so the Optimum Healthy Fry has got to be the answer to our dreams.

    I love making my own potato and sweet potato wedges but don’t want to deep fry them and find they often stick in the oven. So sounds like this would be the answer as well as helping broaden the range of homemade foods I can attempt to make and make them healthier!

    My much loved Actifry is now old and battered and I fear it won’t last much longer, so I’m looking to replace it. The problem with the Actifry is the constant stirring, which means it isn’t possible to cook thinks like these kievs in it, and I’d love to be able to do more than just chips and veg chips.

      Thanks, I haven’t seen kidney bean kievs, these work well because the fava beans cook to a thick stew that firms up well when it cools allowing you to form the patties.

    This is pure genius Janice. I used to love Chicken Kiev in my long ago chicken eating days. I adore beans and I bet these were delicious. What a very clever recipe and I bet they worked brilliantly in the HealthyFry.

    The Fava Bean Kievs look amazing and I’d love to try those.They are a really different idea and I’d never have thought of making bean Kievs before.They look delicious.I’d like to win because it’s so much healtier to use and opens up a whole new way of cooking.So many more recipes that I could try with this machine too.

    These look so good! I’d love the chance to win, please – it would be handy for everything from homemade chips (which taste so good seasoned with garlic and paprika!) to arancini for dinner parties…but without the guilt!

    My partner had an op on his upper spine last year and the medication he is on has made him put on weight. He joined my gym last week and is now going swimming every day to help both with the pain and weight gain. To win an air fryer would help with my healthy eating plan I’ve started for him this year. He’s now waiting to have an op on his lower spine so it’s really important to get as fit and healthy as possible before this happens, which will aid with his recovery.

    Its very hard to give up fried food and you know that it would be better to eat food that was not cooked in lots of oil or fat. This seems a good compromise – a healthier alternative

    I am going through the menopause and have gained weight which I can’t shift so this would enable me to enjoy a treat of chips every now and again whilst still being careful.

    To be honest I love the fact you can pop your food in and walk away whilst it does the hard work for you, I’m not a natural cook although I do try and hovering over the oven cooking from scratch I struggle with and tend to burn stuff! It’ll also help keep me nicely on plan with my slimming world journey (1 stone 7lb off so far!) xx

    I’ve heard these things are supposed to be really good for healthy cooking. I always cook healthy but use recipe books and an oven or frying pan. It would be nice having something more beneficial to cook with

    We like to think we have a healthy diet and don’t fry anything but it occurred to me recently that the occasional treats that we have, like pakoras or breaded mushrooms are fried before we pop them in the oven so I’d love to have a go at making my own.

    I remember my Mum frying chips in a chip pan when I was little. Since then it’s been oven chips all round which, lets face it, are a poor substitute. This fryer would bring back the joy to tea time!

    This recipe looks super and as a family who very rarely fry anything but long for the taste (onion rings for instance) an air fryer looks like the way forward.

    Those Kiev’s look good have always been a bit worried about using Chia Seeds as they are new to me so it’s nice to see recipes that you know someone has tried and tested 🙂
