I’ve been looking into the origin of the Chicken Kiev and have been surprised to learn that it has very long and distinguished history. Chicken Kiev is a recipe from the Russian Empire, with a nod to French Haute Cuisine, right back to the 18th Century spreading into Europe via the restaurant at the Continental Hotel in Kiev which was frequented by European travellers.
What I thought I would do was to try and create a meat-free Kiev using Fava Beans instead of chicken, while retaining the chilled butter in the centre and the crisp ‘fried’ breadcrumbs on the outside. Above is a step-by-step pictorial guide to how I made it, with more detail in the recipe below:
Fava Bean Kiev

Fava Bean Kiev
Ingredients
- 250 g split fava beans
- 1 tbsp chia seeds
- 1 tsp dried thyme
- 1/2 tsp dried oregano
- 50 g butter or non dairy spread
- 1 pinch Salt
- 30 g Parsley chopped
- 1 tbsp plain flour
- 1 pinch Salt & pepper
- 1 egg
- 75 g panko breadcrumbs
Instructions
- Cover fava beans with water and bring to boil, simmer 30 mins until soft
- Drain, and beat with wooden spoon until mushy but still with a little texture.
- Add tsp salt, 1/2 tsp ground black pepper, herbs and chia seeds, to help bind together.
- Leave in a covered bowl in the fridge until cold and thickened.
- Mix it up with spoon or spatula and add half the parsley
- Take half the mixture and form four flat escalope shapes, roughly oval
- Mix the softened butter with crushed garlic and the remaining parsley
- Form into four portions and place on top of the escalopes
- Form a further four escalopes and place each on top of the butter and base, press the edges to make sure they are sealed. Return to the fridge for an hour.
- Mix the flour with salt & pepper, coat each escalope with flour, then dip into beaten egg, then into panko breadcrumbs.
- Preheat the Optimum HealthyFry
- Cook two kievs at once in the Optimum HealthyFry Air Fryer at 180c for 20 min
- Keep the kievs warm in the oven while the second batch is cooking
