The Slow Cooker Challenge – January 2013

If you read the previous post, you will know that I am going to be cooking on limited equipment in the next few months.  Thinking ahead, I requested a Slow Cooker for my Christmas as I felt that it had more possibilities than only cooking in the microwave.  I’ve now used it three times and am quite excited about what I am going to cook next. I’ve been scouring Pinterest for recipes and have also downloaded a Slow Cooker cookbook on Kindle.

I really didn’t intend to run another challenge this year, what with all that is going on in the house, but I just couldn’t resist! Here is how it will work:

The Slow Cooker Challenge

The Slow Cooker Challenge is a monthly blog challenge dedicated
to making recipes using a Slow Cooker or Crockpot. Each month there will
be a theme e.g. soup, dessert, vegetarian etc.

The theme for January 2013 is Soup! 

 
Today I made Slow Cooker Red Lentil, Chickpea and Tomato Soup with Smoked Paprika a recipe from Kaylyn’s Kitchen.  I can thoroughly recommend Kaylyn’s Kitchen as a source of Slow Cooker recipes, here recipe collection is entitled ‘Slow Cooker from Scratch’ so the recipes are not full of processed foods.  
 
When I make it again, I would use ham stock rather than chicken, I would also add a little more smoked paprika, but that is just personal taste. I also added a little sugar to counteract the acidity of the tomatoes.

  • If you are using recipes from another website, please link to
    the recipe on the website rather than publishing the recipe.
  • One entry per blog.
  • Recipes must be added to the linky by the 28th of each month.

    I am a Slow Cooker Addict ~ I have my Veterans' medal as I remember when they were called 'Crockpots'.

    I will join in because I feel strongly about the effort and energy saving slow cookers make.

    Pat – I am aware of your page, thanks. I did a bit of research before creating the challenge. I too am a veteran, I got my first crockpot in 1981, but gave it away in the 90's. looking forward to learning from you and others, always something new to learn.

    Oh, this is so good! My parents bought me my first slow cooker when I was at university. I only bought a new one because I needed it to be bigger. I have made soup once in it and came back to some very angry flatmates…

    Wish I had seen this before doing my scotch broth, that would have been ace in a slow cooker. Will have to think of something else now
