As usual Saturday lunch was a a bit of a forage in the fridge. I sliced a couple of very thin slices of sourdough bread and spread them with lighter than light Helmann’s mayo, then piled up a mixture of watercress and baby salad leaves. Some slices of red pepper and tomatoes topped it off.
Then I remembered that Jac at Tinned Tomatoes was looking for soups or salads that featured coconut for No Croutons Required, so I sprinkled a little dessicated coconut on top. This is almost as bad as the ‘Tart’ cake that Dom from Belleau Kitchen entered for Alphabakes, but if he can get away with it, I’m sure I can!
