Ingredients
25gramsbutter
1large onionroughly chopped
1large carrotwashed and finely diced
2heads of lettuce or about 200 g leaves
1tablespoonchopped chives
300millilitresvegetable stock
salt & pepper
300millilitresfull fat milk
Garnish
1teaspoonchivesfinely chopped
50 ml pouring cream
Instructions
Melt the butter over a medium heat. Add 1 large chopped onion and 1 large chopped carrot and cook until the onion is soft.
Roughly chop the 2 heads of lettuce (approximately 200 g/4 cups) and add to the pan, cook until the lettuce has wilted.
Add the 300 ml (1¾ cups) stock, season with a little salt and pepper and cook for about 5-10 minutes until the carrots are just softened.
Remove from the heat and place into a blender with the 300 ml (1 ¾ cups) milk. Blend until completely smooth, taste and add more seasoning if required.
Return the blended soup to the pan and heat gently.
Serve with a swirl of cream and a sprinkling of chopped chives
