Hot Cross Bun Waffles

Hot crisp waffles straight off the waffle iron, with all the flavours of Hot Cross Buns - ideal for Easter breakfast.

Ingredients
 

  • 295 grams self raising flour
  • 55 grams caster superfine sugar
  • 1/2 lemon zest
  • 1/2 orange zest
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon
  • 50 grams raisins roughly chopped
  • 125 grams butter melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 430 millilitres milk

Instructions
 

  • 295 grams self raising flour, 55 grams caster, 1/2 lemon, 1/2 orange, 1 teaspoon mixed spice, 1 teaspoon cinnamon, 50 grams raisins roughly chopped
    Whisk the dry ingredients together in a medium bowl, add the chopped raisins.
  • 125 grams butter, 1 teaspoon vanilla extract, 430 millilitres milk
    Whisk the milk, eggs and vanilla together in another bowl.
  • Make a well in the centre of the dry ingredients and pour in the milk mixture and the melted butter and lightly whisk the ingredients until combined. Do not over mix, it should still be slightly lumpy.
  • Let the batter rest while pre-heating the waffle maker.
  • Turn the POWER/DARKNESS control dial to your desired setting, I used setting 5. Wait until the READY light illuminates.,
  • Pour approximately 125 ml (I found a 1/2 cup measure was about right) of batter evenly onto the centre of the waffle plate and close the lid.
  • At the end of the cooking cycle, open the lid and carefully remove your waffle.
  • Repeat with the remaining batter.
  • Make a cross in the waffle indentations using melted chocolate or chocolate syrup and add the toppings of your choice.

Notes

Use only non-stick friendly spatulas to help remove your waffle. Make sure you dip right down to get some raisins in each waffle. For consistent results, put the next batch of batter in immediately after removing the cooked waffle.
