100mldouble (heavy) cream
1mediumegg
1pinchnutmeg
25gGruyere cheese
1tspfresh parsley optional
Instructions
Check that your oven-proof dish fits your air fryer.
Pre-heat the air fryer if your model recommends it.
Cut the ends off the 250 g (1½ cups) courgette/zucchini, then cut it in half lengthways. Cut each half into three long strips and then cut across into pieces about 1 cm square (just under ½ in).
Put the chopped courgette into the dish with 2 tsp olive oil and ¼ tsp salt and mix to coat the courgette pieces. (If preferred you can mix the vegetables with oil and salt in a bowl before adding to the baking dish).
Roast the courgettes at 180C for 7 minutes. Open the drawer and turn the courgettes over with a spoon, then roast for another 8 minutes. (If your air fryer has a 'shake' function, then set the timer for 15 minutes and turn the courgettes when the air fryer stops to instruct you to 'shake')
Mix the egg with the 100 ml (⅓ cup) double cream and a pinch of freshly grated nutmeg.
When the courgettes are roasted, pour the egg and cream mixture over the courgettes in the dish.
Grate the 25 g (¼ cup) cheese and sprinkle over the courgettes and cream mixture.
Bake at 180 C (350F) for 10 minutes.
Leave to cool for 5 minutes before serving garnished with 1 tsp chopped parsley.
