APPLE MINT VINEGAR

Equipment

  • 1 glass jar with lid
  • 1 measuring jug
  • 1 250 ml (½ pint) glass bottle with lid

Ingredients
 

  • 275 ml white wine vinegar
  • apple mint leaves enough to almost fill the glass jar

Instructions
 

  • Remove the apple mint leaves from their stems. Wash and dry them thoroughly on kitchen paper.
  • Place enough apple mint leaves into the jar to make it ¾ full.
  • Pour over 275 ml (1 ¼ cups) white wine vinegar into the jar.
  • Add the lid and close firmly. Give the jar a shake. Then keep in a cool, dark place (the refrigerator is ideal) for 2 weeks to allow the herbs to infuse the vinegar.

To finish

  • sterilise bottles lay flat on baking tray.
  • Use a sieve or a coffee filter to strain the leaves from the vinegar.
  • Pour the vinegar into the sterilised bottle, seal and label.
  • Use apple mint vinegar as a marinade, add to salad dressings or to dress cooked vegetables.

  • Apple mint vinegar will keep unopened in a cool dark place for up to 1 year. Once opened keep in the refrigerator and use within 3 months.
