Air Fryer Pitta Pizzas (Flatbread)

Air Fryer Pitta Pizzas are the perfect quick and easy recipe for a favouite meal. Make these super simple pizzas with ready made flatbreads, a homemade tomato sauce and the toppings of your choice.

Equipment

Ingredients
 

  • 4 pitta breads or flatbreads

For the sauce

  • 1 tsp olive oil
  • 1 clove garlic
  • 400 grams can cherry tomatoes
  • 1 teaspoon dried oregano
  • pinch salt
  • 1 teaspoon sugar

For the toppings

  • 200 grams mozzarella
  • 10 grams fresh basil
  • 100 grams fresh mushrooms
  • 20 grams butter
  • 10 grams fresh parsley
  • 40 grams sliced pepperoni

Instructions
 

For the sauce

  • Put 1 tsp of olive oil in a pan and add one clove of garlic (crushed) and fry until just changing colour.
  • Add 400 g (1½ cups) canned cherry tomatoes, 1 tsp dried oregano, a pinch of salt and 1 tsp of sugar to the pan and simmer for 10 minutes.
  • Lay out the 4 Pitta breads or flatbreads on baking parchment squares and spread with the sauce. You will have extra sauce which you can keep in the fridge or freezer to make more pizzas or to add to a pasta dish.
  • Pre heat the air fryer (if required).
  • Cover the tomato sauce with 50 g (4 slices) mozzarella. Set the air fryer to 180C (350F) and cook for 3 minutes until the pizza is warmed through and the cheese has started to melt.
  • OR use 50 g (¼ cup) grated mozzarella. Set the air fryer to 180C (350F) and cook for 3 minutes until the pizza is warmed through and the cheese has started to melt.

Marguerita Pitta Pizza

  • Add basil leaves and a drizzle of olive oil to the Air Fryer Pitta Pizza for a Marguerita pizza.

Mushroom Pitta Pizza

  • Slice 100 g of mushrooms. Heat butter in a frying pan and gently saute the mushrooms. Then top the baked Pitta Pizza with the mushrooms and sprinkle over some chopped parsley.

Pepperoni Pitta Pizza (makes 2)

  • Cover the melted mozzarella on each Pitta Pizza with 20 g of sliced pepperoni. You can pop the pizzas back in the air fryer for a further minute if you want the pepperoni warmed or serve just as they are. Then scatter over a little chopped parsley, if liked.

To serve

  • Serve the pitta pizzas with salad and/or air fryer chips (fries).
