Sticky Toffee Pears

Simple spiced poached pears with a sticky toffee sauce

- 4 ripe pears
- 500 millilitres water
- 2 tablespoon soft brown sugar
- 2 star anise
- 1 cinnamon stick
- 4 whole cloves
Put the water in a saucepan with the sugar and the whole spices.
Heat gently until the sugar has dissolved.
Peel the pears and remove the core from the base of the pear. If you can leave the stalk on the pear as it looks better for serving.
Once the sugar has dissolved, add the peeled pears and poach on low heat for 15-20 minutes.
Carefully remove the pears from the cooking liquor and set aside.
Bring the syrup to boiling point and watch carefully as the liquid reduces and turns thick and syrupy.
Remove from the heat and pour over the pears.
Serve with cream or ice cream.
