Sweet Balsamic Grilled Chicken

This chicken is perfect for grilling on the barbecue, it is moist and delicious from the simple marinade.

Ingredients
 

  • 180 millilitres balsamic vinegar
  • 100 millilitres olive oil
  • 2 tablespoon chopped fresh rosemary
  • 3 garlic cloves chopped
  • 1 teaspoon crushed red pepper flakes
  • 2 teaspoon honey
  • 6 boneless skinless chicken breasts

Instructions
 

  • In a bowl combine the balsamic vinegar, olive oil, rosemary, garlic, red pepper flakes, and honey.
  • Pour it into a large plastic bag or shallow glass dish.
  • Add the chicken and allow it to marinate in the mixture for at least 2 hours and up to overnight. Turn the bag occasionally to ensure the chicken gets marinated evenly.
  • Remove the chicken from the bag. Discard the marinade and pat the chicken dry with kitchen roll (paper towels). Season both sides of the chicken well with salt and pepper.
  • Grill the chicken over a medium-hot barbecue grill for about 10 minutes on each side or until it is cooked through and the juices run clear.
  • Alternately, roast the chicken in the oven at 220C for about 15 minutes.

Notes

Other cuts of chicken - use chicken thighs, legs or drumsticks.  However, they will take longer to cook, the time being dependent on the size. Please ensure the meat is cooked thoroughly and there is no pink in the juices. 
Serve with baked potatoes and salad.
