Salted Caramel Peach Ice Cream Sundae

A delicious dessert of roasted caramelised peaches with salted caramel ice cream, a salted caramel chocoalte sauce, cream and curnchy toppings.

For the peaches
- 4 peaches ripe but firm
- 50 soft light brown sugar
- 25 grams salted butter
For the sauce
- 100 grams salted caramel chocolate
- 20 grams butter
- 2 tablespoon water
To Finish
- 500 grams salted caramel ice cream
- 30 grams caramel popcorn
- 25 grams roasted salted almonds
- 100 millilitres whipped cream
Caramelise the peaches
4 peaches
Put the whole peaches in a bowl and cover with boiling water for 1 minutes. Drain off the water and the skins will slip off the peaches.
Cut the peaches in half and remove the stones.
50 soft light brown sugar, 25 grams salted butter
Slice the peaches and place in an ovenproof dish, cover with sugar and dot with butter.
Bake in the oven for 10-15 minutes until the sugar and butter melts and the peaches start to brown and caramelise.
Remove the peaches from the caramel and leave both to cool.
Make the sauce
100 grams salted caramel chocolate, 20 grams butter, 2 tablespoon water
Place all the ingredients in a small pan and heat gently, stirring.
Once the chocolate has melted it will form a sauce you may need a little more water to get it to pouring consistency.
To assemble the Sundae
Put the peach slices in the base of the sundae glasses or bowls.
Drizzle over the caramel sauce that the peaches were roasted in.

Put a scoop of salted caramel ice cream into each glass.
Add another layer of roasted peaches
Add another scoop of salted caramel ice cream
Divide the caramel chocolate sauce between the four portions.
30 grams caramel popcorn, 100 millilitres whipped cream, 25 grams roasted salted almonds
Top with a swirl of whipped cream and sprinkle over chopped salted roasted almonds and caramel popcorn.
Serve immediately
