Salted Caramel Peach Ice Cream Sundae

Ingredients
 

For the peaches

  • 4 peaches ripe but firm
  • 50 soft light brown sugar
  • 25 grams salted butter

For the sauce

  • 100 grams salted caramel chocolate
  • 20 grams butter
  • 2 tablespoon water

To Finish

  • 500 grams salted caramel ice cream
  • 30 grams caramel popcorn
  • 25 grams roasted salted almonds
  • 100 millilitres whipped cream

Instructions
 

Caramelise the peaches

  • 4 peaches
    Put the whole peaches in a bowl and cover with boiling water for 1 minutes. Drain off the water and the skins will slip off the peaches.
    How to peel peaches
  • Cut the peaches in half and remove the stones.
  • 50 soft light brown sugar, 25 grams salted butter
    Slice the peaches and place in an ovenproof dish, cover with sugar and dot with butter.
  • Bake in the oven for 10-15 minutes until the sugar and butter melts and the peaches start to brown and caramelise.

  • Remove the peaches from the caramel and leave both to cool.

Make the sauce

  • 100 grams salted caramel chocolate, 20 grams butter, 2 tablespoon water
    Place all the ingredients in a small pan and heat gently, stirring.

  • Once the chocolate has melted it will form a sauce you may need a little more water to get it to pouring consistency.

To assemble the Sundae

  • Put the peach slices in the base of the sundae glasses or bowls.
  • Drizzle over the caramel sauce that the peaches were roasted in.
  • 500 grams salted caramel ice cream
    Put a scoop of salted caramel ice cream into each glass.
  • Add another layer of roasted peaches

  • Add another scoop of salted caramel ice cream

  • Divide the caramel chocolate sauce between the four portions.

  • 30 grams caramel popcorn, 100 millilitres whipped cream, 25 grams roasted salted almonds
    Top with a swirl of whipped cream and sprinkle over chopped salted roasted almonds and caramel popcorn.
