Instructions
Put 200 grams granulated sugar, 200 ml cider vinegar and 100 ml cider into a large pan. Add ¼ tsp cayenne pepper, ½ tsp ground cinnamon, ½ tsp ground ginger and 1 teaspoon of finely grated fresh ginger to the pan. Put the pan on the stove and heat gently until the sugar is dissolved.
Add 250 grams chopped onion to the pan and simmer gently for 5 minutes.
It can take some time to peel all the pears, so to prevent them from going brown, I fill a bowl with water and two tablespoons of lemon juice and pop the pears in there until I'm ready to chop them.
Core the pears and cut into 2 cm/½ inch chunks (approximately).
Bring the liquid in the pan up to a simmer and add the pears.
Simmer the chutney until most of the liquid has gone and the pears are soft but still in chunks.
Take the pan off the heat and add 50 grams sultanas (golden raisins).
Leave to cool for 10 minutes, then fill into sterilised glass jars, cover the top of the chutney with a waxed paper circle, then add the lid and label the chutney.
Serve Simple Pear Chutney with Cider as part of a cheeseboard, it also goes well with curries and is delicious with roast pork.
