Ingredients

  • 75 g self-raising flour
  • 50 g porridge oats
  • 140 g light muscovado sugar
  • 2 tsp cinnamon
  • 1/2 tsp bicarbonate of soda
  • 1 egg beaten
  • 150 ml milk
  • 6 tbsp vegetable oil
  • 125 g chopped apple
  • 175 g mincemeat

Streusel Topping

  • 25 g plain flour
  • 50 g light muscovado sugar
  • 25 g butter

Instructions

  1. Preheat the oven to 180 C

  2. Line a muffin pan with paper cases

Prepare the Streusel Topping

  1. Put the flour and butter in a bowl and cutting in the butter, then rubbing it in until it looks like breadcrumbs
  2. Add the sugar
  3. Leave to one side.

To make the Muffins

  1. Put the flour, oats, sugar and cinnamon in a large bowl and mix them well together.
  2. In another bowl, beat the egg, stir in the milk and oil.
  3. Gently stir the egg mixture into the dry ingredients, with a metal spoon or spatula, until the flour is 'just' mixed.
  4. Fold in the chopped apple and mincemeat.
  5. Divide the mixture between the muffin cases, filling them to the brim.
  6. Sprinkle each muffin with a teaspoon of the Streusel mixture.
  7. Bake for 20 minutes until risen and golden.
