Broccoli and Stilton Soup

A super simple blended soup that is delicious and full of flavour.

- 1 large onion roughly chopped
- 1 tbsp olive oil
- 1 large potato peeled and cubed
- 1 litre vegetable stock
- 300 g broccoli roughly chopped
- 1 tsp salt
- ½ tsp black pepper
- 100 g Stilton crumbled
1 large onion, 1 tbsp olive oil
Sauté the onion in 1 tbsp olive oil in a large pan until soft (about 5 minutes).
1 large potato, 1 litre vegetable stock
Add the potato and stock and simmer until the potato is tender (about 10 minutes).
300 g broccoli
Add the broccoli and cook for 3-4 minutes until just tender but still bright green.
100 g Stilton
Add half the cheese and blend to a smooth soup.
1 tsp salt, ½ tsp black pepper
Season then serve with the rest of the cheese crumbled over.
