Prepare 300 grams (2 cups) brussels sprouts by cutting off a little of the base and removing any loose or damaged outside leaves. Give them a rinse in a colander.
Put the brussels sprouts into a pan of boiling salted water and cook for 3-4 minutes. They should be just tender.
Cut 6 rashers of smoked streaky bacon into small pieces and fry over a medium heat until the bacon is crispy.
Lift the bacon pieces out of the pan, leaving behind the fat, and lay them onto kitchen paper to drain.
Add 1 tablespoon of olive oil to the pan along with 1 tablespoon of grain mustard and 1 teaspoon of Dijon mustard, 1 teaspoon of maple syrup and 1 tablespoon of Rosemary Vinegar or other salad vinegar. Heat gently and mix to combine.
Add the cooked brussels sprouts to the dressing and stir to ensure that it covers all the vegetables.
Just before serving, add the cooked bacon and stir through.
Serve with roast meat, chops or sausages with or without other side dishes.
