What is rosemary?
Rosemary is a fragrant, evergreen herb native to the Mediterranean. It has needle-like leaves and a strong, piney aroma, making it a popular ingredient in cooking for adding depth and flavour to dishes such as roasted meats, potatoes, breads, and many other dishes.
As well as its uses in cooking, rosemary is an attractive garden plant and is also used in herbal remedies. Rosemary can be used fresh or dried, and its intense flavour stands up well to roasting and grilling.
Can I use dried rosemary?
You can use dried rosemary although you won’t get the fresh flavour that fresh rosemary will bring. If you do use dried rosemary then you should miss out the part where you bake the the rosemary seasoning salt.
What kind of salt should I use?
I use sea salt flakes or crystals The larger pieces of salt will break down with the rosemary and become a finer seasoning salt.
Can I use table salt?
I haven’t tested the recipe with fine table salt. My concern would be that the salt would turn to powder, so if you do use it then I suggest that you make sure that the rosemary is chopped very small so that you don’t have to blend it for long.
How long can I keep the Rosemary Seasoning Salt?
As long as the salt is fully dried it will keep for up to a year. However, I prefer to make a small quantity and use it within 3 months as the flavour of the rosemary will eventually start to diminish.
How should I serve Rosemary Seasoning Salt?
This rosemary salt is ideal for seasoning lamb, beef, chicken, and pork, giving its aromatic flavours to both roasted and grilled meats. It’s also great with roast potatoes, and perfect to add to roasted Mediterranean vegetables like courgettes, peppers and tomatoes.
Rosemary salt is delicious with bread, particularly focaccia, and works beautifully in savoury baked goods and stuffing. Try adding rosemary seasoning salt to tomato sauces, stews, and soups for extra flavour.

ROSEMARY SEASONING SALT
Equipment

Ingredients
- 10 grams (5 tbsp) fresh rosemary
- 60 grams (¼ cups) sea salt
Instructions
- Remove the leaves from 10 grams (5 tablespoons) of rosemary stems.

- Roughly chop the rosemary.

- Weigh out 60 grams (¼ cup) of sea salt.

- Put the rosemary and salt into a blender or spice grinder.

- Line a baking tray (sheet pan) with foil and spread the herb salt over the tray.

- Bake the herb salt at 60℃ for 1 hour.

- Remove the salt from the oven and leave to cool, then return it to the cleaned blender and blend again.

- Store the rosemary seasoning salt in a glass jar with a lid. It makes a perfect finishing touch for roasted potatoes, grilled meats and focaccia.
