What kind of strawberries should I use?
You can use any strawberries. This recipe is ideal to use smaller strawberries, they have a more intense flavour and less water than the larger berries.
Strawberries are naturally sweet with a tangy twist, making them the perfect star for a dessert like mousse. Using fresh strawberries gives the dish a vibrant, refreshing flavour that’s hard to resist.
What kind of cream should I use?
You will need double (heavy) or whipping cream with at least 30% fat content. This cream is able to absorb and hold the strawberry puree suspended. Cream with a lower fat content just can’t do this and will end up as strawberry soup!
What kind of sugar should I use?
I use icing sugar (confectioner’s sugar) because it simply disappears into the strawberry puree with no grittiness.
Can I substitute granulated sugar?
I don’t recommend granulated sugar as it takes much longer to dissolve into the puree. If you don’t have icing sugar then caster sugar is the next best thing as the crystals are smaller.
Why should I add lemon juice to Simple Strawberry Mousse?
The strawberry mousse is a rich dessert and a little lemon juice adds a bright note at helps to bring out the fresh strawberry flavour. You can leave it out if you don’t have any, but even the small amount that I use makes a difference.
Can I make strawberry mousse ahead of time?
Yes, in fact, you need to give the mousse at least an hour to set up before you eat it. You can make it the day before and store it in the refrigerator overnight before decorating and serving.
This makes it ideal for parties and gatherings where you would prefer to get ahead with your preparations.
Can I freeze Simple Strawberry Mousse?
No, this recipe is not suitable for freezing. The strawberry puree will separate from the cream on defrosting. It’s best to make this recipe fresh and eat it within a couple of days.
However, you can make and freeze the strawberry puree so that you can enjoy this dessert any time of year. Whether it’s a sunny day or a chilly evening, strawberry mousse always hits the spot.

How should I serve Simple Strawberry Mousse?

Simple Strawberry Mousse (No Gelatine)
Equipment
- Sharp knife
- chopping board
- 4 glasses
- food processor or blender
- Sieve optional
- electric mixer or whisk
- spatula
- Piping bag
- Wilton 1 M piping nozzle
- dessert spoon
Ingredients
- 250 grams strawberries hulled (stalks removed)
- 50 grams icing/powdered sugar confectioners sugar
- 300 millilitres double cream heavy cream
Garnish
- 4 strawberries
Instructions
- Add 250 g hulled strawberries and 50 g icing (confectioners) sugar in a food processor or blender until you have a strawberry puree.

- Sieve the puree to remove the seeds (optional). Set aside 4 tbsp of strawberry puree in bowl.

- Put 300 ml double (heavy) cream in a bowl.

- Whip the cream until it stands in stiff peaks. Be careful not to overwhip the cream.

- Set aside 50 ml of whipped cream to decorate the mousse.

- Add the strawberry puree to the remaining whipped cream and stir together gently with a spatula, so you do not knock out all the air that you have whipped into the cream.

- Spoon 1 tbsp of strawberry puree in the base of each of four glasses.

- Divide the strawberry mousse between the four glasses. Carefully spooning it over the strawberry puree, or you can pipe it in if you prefer.

- Place the glasses into the refrigerator for at least an hour.
- Put the remaining cream in a piping bag with a star nozzle ( I use Wilton 1M) and pipe a star of cream onto each glass.

- Garnish with a single strawberry. Chill again until ready to serve.

- Take the glasses out of the refrigerator 5-10 minutes before serving. You may wish to serve a small shortbread biscuit (cookie) with the mousse.
