Seasonal Pumpkin Recipes is a collection of delicious recipes for every meal. In this collection, you will find soups, snacks, dinners, bread and dessert all made with the very versatile pumpkin!
WHAT IS #COOKBLOGSHARE?
CookBlogShare is a community for food bloggers to share recipes and foodie posts and generally support the food blogging community. The community is centered around the #CookBlogShare linky.
It is a wonderful way for a wide range of food writers, recipe creators and bloggers to come together and share each other’s recipes.
The linky is now hosted regularly by Sisley from Sew White & Chloe from Feast Glorious Feast. New members are always welcome to join so make sure you invite your other food blogger friends!
The last linky was hosted by Helen at Family-Friends-Food.com who put together a collection of Autumn Nut Recipes.
Each week the host chooses a selection of recipes that have been submitted during the previous week to showcase. This week I’m focussing on all things Pumpkin!
Why make Seasonal Pumpkin Recipes?
I look forward to pumpkin season every year. I think it’s a shame that all too often the beautiful orange, green and white pumpkins feature only as Halloween decorations. I’m much more interested in eating pumpkins than carving them!
Versatile Pumpkins and Squash
Pumpkins and squash are very versatile, you can boil them, roast them, stuff them and even cook them in your slow cooker. Use pumpkin in sweet or savoury recipes, the flesh takes on all the flavours that you add to it and has a great texture that works on its own or with other ingredients.
I set myself a challenge to use every part of a pumpkin and came up with the following three recipes that use the pumpkin flesh and seeds in different ways.
Spicy Roast Pumpkin and Coconut Soup
Spicy Roast Pumpkin and Coconut Soup is a perfect autumn recipe. It’s made with sweet roast pumpkin, warming chilli and creamy coconut milk all blended to a rich smooth vegan and dairy-free soup and sprinkled with chilli flakes and coconut.
Roast Pumpkin Hummus
Roast Pumpkin Hummus combines sweet roasted pumpkin with chickpeas and tahini to make a delicious dip or spread. It is ideal for parties or family snacks served with pitta bread or carrot sticks. It is also a great way to use the abundance of pumpkins and squashes that come into the shops in October.
Roast Pumpkin Seeds
Roast Pumpkin Seeds are a tasty and healthy snack that you can easily make at home with the seeds from your Halloween pumpkin. I’ve always wanted to try roasting pumpkin seeds, but somehow I’ve never quite got round to it. If you have been thinking about it but didn’t know how to start then this recipe will give you all the information you need.
