Quick and Easy Pitta Pizzas

Do you have nights when you can’t be bothered to cook?  You don’t need to send for an expensive takeaway, you can make these Quick and Easy Pitta Pizzas in no time.

Keep a pack of ready made pitta breads in your freezer and you can whip up a tasty meal in no time and it’s something that will appeal to everyone.  Quick and Easy Pitta Pizzas are a great recipe for children to make, they can choose their own toppings, which is likely to ensure that they eat them too!

I made the sauce for the Quick and Easy Pitta Pizzas in my Optimum ThermoCook which is brilliant for making sauces, everything goes into the ThermoCook and is blended then cooked right in the blender.  You can read my review of the ThermoCook and to find out more, please click through the ThermoCook picture in my side bar on the right of this post.

A tasty plate of Scottish Sardines on Toast

Sardines on Toast is a quick and healthy snack from your pantry that is cheap and easy to make. Serve Scottish style on thick slices of toasted batch baked bread, only 10 minutes from start to finish.

Quick and Easy Pitta Pizzas

Top ready made pitta bread with homemade tomato sauce and the toppings of your choice, pop them in the oven and supper is ready.

Ingredients
 

  • 4 pitta breads

For the sauce

  • 400 g can high quality tomatoes
  • 1 clove garlic
  • 1 tsp mixed dried herbs
  • pinch salt
  • 1 tsp sugar

Toppings

  • 2 tomatoes
  • 200 g cheese ideally mozarella but I used cheddar
  • 50 g olives sliced

Instructions
 

  • Pre heat the oven to 200C

To make the sauce in the ThermoCook

  • Put the canned tomatoes, garlic, salt, sugar and herbs into the ThermoCook
  • Process on 'Smoothie' for 30 seconds until all the ingredients are blended
  • Set to 90C, speed 2 for 10 minutes

To make the sauce on the stove

  • Blend the tomatoes with the garlic, salt, sugar and herbs
  • Pour into a pan and simmer for 10 minutes

To Assemble

  • To make the Quick and Easy Pitta Pizzas, spread the sauce on the Pitta Pizzas (there is more than enough sauce for 8 pizzas, so you can freeze half for another time if you don't use it all)
  • Top with sliced fresh tomatoes, cheese and olives (or toppings of your choice)
  • Place on a baking tray and bake for 8-10 minutes until the cheese is bubbling.

Notes

If you don't have a Thermocook, you can make the sauce in a saucepan on the stove top, following the same instructions. 
Serve with salad and coleslaw or if you are really hungry, cook some oven chips while you are making the sauce and they will be ready at the same time as the Pitta Pizzas.

The Quick and Easy Pitta Pizzas were really good and I also loved the tomato sauce, it was really flavourful for a sauce cooked for such a short time, amazing!  I served the sauce served with meatloaf later in the week and it worked really well, it is now my ‘go to’ tomato sauce.

    What a super idea for when you need a pizza fix!

    I have also left my pizza dough in the fridge for up to a week and you just get a dollop out and bake it when you’re ready!

      You can tell we love olives, but I’m sure they wouldn’t suit everyone, I think it is fun to let everyone choose their own toppings

    This is a super idea when you are in a hurry and want a speedy dinner or snack. I always find I prefer hot sandwiches compared to cold for lunch , this would make a great’hot ‘snack

    Ordering a pizza delivery is expensive and often a disappointment – these are a great idea, handy and tasty!

      We can’t even order pizza, Heidi as we live too far out into the countryside and no one will deliver! But you are right, takeaways are not all they are cracked up to be and you can make something much better and just as quick at home.

    I LOVE pitta bread pizzas and have a 5:2 diet one with smoked salmon (on L and L) that you might like, as it is low in calories! Your pitta pizzas here look VERY tasty and I perfect for a savoury Tea Time Treats entry too! Karen

    Really this is pure genius. We often end up having beens on toast. I’ve made pitta pizzas plenty of times, but never thought to have a pack of them on standby in the freezer. So next time we can’t be bothered to cook we’re going to have a change from beans on toast.

      I’m glad you like it. I think it comes from living in the country without many shops around, I like to keep a few things in the freezer for quick meals.
